This sugar cane capital of the Philippines, strangely is not known for cloyingly sweet fare. They hold the Sabor Visayas, a regional food festical every two years and it’s also the land of the Piaya(a moscovado sugar pancake), and also known for the Chicken Insasal.. check out the Manokan County, a whole building of bbq Chicken Inasal restaurants. Watch out for their up can coming Silay Market, specialising in local snacks and not-so-sweet treats. It is also the birthplace of Cansi, a beefy soup enlivened with Batwan, an extremely sour fruit found locally.
